
Directions
200g almond meal
85g monk fruit
100g ghee
1 egg
1/4 cup sugarfree choc chips
45g shredded coconut
3 tbsp collagen powder
2 tsps baking powder
Preheat oven to 180 degrees
Place all ingredients into a food processor and blend until combined
Roll into tablespoon sized balls and press down with a fork
Bake for 12-15 minutes until golden




Variations
Choc Chip: Add 1/4 cup choc chips
Jam Drops: Make a hole in the centre of each cookie and add 1 teaspoon of sugar-free jam.
White chocolate & macadamia: Add 1/4 chopped sugar-free white chocolate & 1/4 chopped macadamias
Orange Cardamom: Add 1/2 teaspoon of cardamom & 4 drops of orange essential oil or orange extract.
